Instructions
Step 1: Preheat the oven to 350°F (175°C) and grease two round cake pans.
Step 2: In a bowl, whisk together the flour, baking powder, and salt.
Step 3: In a separate large bowl, beat the butter and sugar until light and fluffy.
Step 4: Add the eggs and vanilla extract, mixing well after each addition.
Step 5: Alternate adding the dry ingredients and milk into the batter until smooth.
Step 6: Divide the batter evenly between the prepared pans and bake for 25 to 30 minutes.
Step 7: Allow the cakes to cool completely before frosting.
Step 8: To prepare the frosting, beat the butter until creamy, then gradually add powdered sugar, heavy cream, and vanilla extract until smooth.
Step 9: Stack and frost the cake with a thin crumb coat.
Step 10: Prepare the blue jelly by heating the water and dissolving the gelatin powder, blue gelatin mix, and sugar. Let the mixture cool slightly.
Step 11: Build a transparent cake collar around the cake using acetate sheets.
Step 12: Slowly pour the cooled jelly over the top of the cake to create the ocean effect.
Step 13: Refrigerate the cake until the jelly is fully set.
Step 14: Decorate the top with crushed chocolate cake pieces and cookie crumbs to resemble rocky islands.
Step 15: Add white chocolate shards for wave details and place the whale topper into the jelly.
Step 16: Chill the cake for at least 1 hour before serving.
Storage and Reheating Tips
Store the cake covered in the refrigerator for up to 4 days.
Because of the jelly layer, keep the cake chilled until ready to serve.
Avoid freezing the jelly portion, as it may lose its clear texture after thawing.
For best presentation, slice the cake with a warm knife and wipe clean between cuts.
