One-Pan Baked Chicken Drumsticks with Potatoes & Peppers

Instructions:
step 1: Preheat oven to 400°F (200°C).
step 2: In a large bowl, combine olive oil, paprika, garlic powder, thyme, rosemary, salt, and pepper.
step 3: Add chicken drumsticks and toss to coat evenly. Set aside.
step 4: In a baking dish, combine cubed potatoes, bell peppers, and onion. Pour in the chicken broth and stir in the tomato paste.
step 5: Place the seasoned drumsticks on top of the vegetables.
step 6: Cover the baking dish with foil and bake for 40 minutes.
step 7: Remove foil and bake uncovered for an additional 20–25 minutes, or until the chicken is browned and cooked through, and potatoes are tender.
step 8: Garnish with fresh parsley and serve warm.

Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through. For microwave reheating, cover and heat in short intervals, stirring occasionally for even warming.
