step 2 In a small bowl, combine olive oil, melted butter, garlic, thyme, rosemary, paprika, salt, and pepper.
step 3 Place chicken thighs in a large mixing bowl or dish and toss with half of the garlic herb mixture.
step 4 In a separate bowl, toss the halved potatoes, broccoli florets, and red bell pepper with the remaining herb mixture.
step 5 Arrange the seasoned vegetables evenly in a greased baking dish or sheet pan.
step 6 Place the chicken thighs on top of the vegetables, skin-side up.
step 7 Roast for 40-45 minutes or until the chicken reaches an internal temperature of 165°F and the skin is golden and crispy.
step 8 Broil for the last 2-3 minutes if desired for extra crispiness.
step 9 Garnish with fresh parsley and serve hot.

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F for 10-15 minutes or in the microwave until warmed through. For best texture, reheat chicken and potatoes in the oven to maintain crispiness.
