Instructions:
step 1 Preheat oven to 400°F (200°C). Lightly grease a large baking dish or sheet pan.
step 2 In a small bowl, whisk together olive oil, minced garlic, thyme, rosemary, paprika, onion powder, salt, and pepper.
step 3 Place the chicken thighs, potatoes, bell peppers, and broccoli into the baking dish. Pour the garlic herb mixture over everything and toss to coat evenly.
step 4 Arrange the chicken skin-side up and spread the vegetables out in a single layer around the chicken.
step 5 Bake uncovered for 40-45 minutes, or until the chicken is fully cooked (internal temperature of 165°F) and the vegetables are tender and slightly caramelized.
step 6 Broil for the last 2-3 minutes for extra crispy chicken skin, if desired.
step 7 Garnish with chopped fresh parsley before serving.
Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through, or microwave individual portions. Add a splash of broth or water if needed to keep everything moist.
