Instructions
step 1 Preheat the oven to 200°C (400°F).
step 2 In a large bowl, toss baby potatoes with 1 tbsp olive oil, salt, pepper, and half of the herbs and spices.
step 3 Arrange the seasoned potatoes on one side of a greased or parchment-lined baking dish.
step 4 Rub chicken breasts with 1 tbsp olive oil and coat evenly with the remaining spices. Place them next to the potatoes in the baking dish.
step 5 Drizzle the melted butter over the chicken and potatoes.
step 6 Roast for 25 minutes. Remove dish from the oven, add green beans tossed in 1 tbsp olive oil, salt, and pepper to the pan.
step 7 Return to the oven and roast for another 10–15 minutes, until chicken is cooked through and potatoes are golden and tender.
step 8 Let rest for a few minutes, then garnish with fresh parsley or chives before serving.
Storage and Reheating Tips
Store leftovers in an airtight container in the fridge for up to 3 days. Reheat in the oven at 180°C (350°F) or in the microwave. To keep the chicken juicy, add a splash of broth or water when reheating.
