One-Pan Herb Roasted Chicken Drumsticks with Potatoes & Carrots

Instructions:
step 1 Preheat your oven to 400°F (200°C).
step 2 In a large bowl, mix olive oil, lemon juice, garlic, thyme, rosemary, parsley, paprika, salt, and pepper.
step 3 Add chicken drumsticks to the bowl and toss to coat evenly in the herb marinade.
step 4 Add the potatoes and carrots to the bowl and mix until they are well coated.
step 5 Transfer everything to a large baking dish or sheet pan, arranging the chicken on top of the vegetables.
step 6 Roast in the preheated oven for 40-45 minutes, or until the chicken is golden and cooked through (internal temp should reach 165°F/74°C).
step 7 For crispier skin, broil for an additional 2-3 minutes at the end.
step 8 Garnish with fresh chopped parsley before serving.

Storage and Reheating Tips:
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through, or microwave individual portions for 2-3 minutes. For best texture, avoid microwaving the entire batch.
