Instructions

Step 1: In a large pot or deep skillet over medium heat, cook the ground beef with diced onion and garlic until browned. Drain excess fat.

Step 2: Season the beef with chili powder, cumin, salt, and pepper. Stir well.

Step 3: Add enchilada sauce, diced tomatoes, and beef broth. Bring to a simmer.

Step 4: Stir in the tortellini. Cover and cook for 5-7 minutes (or according to package directions) until the tortellini is tender.

Step 5: Sprinkle cheddar and mozzarella cheese over the top. Cover for 1-2 minutes until the cheese is melted and gooey.

Step 6: Garnish with chopped cilantro or parsley and serve hot!
