Oven-Baked Cajun Salmon & Shrimp Tray

Instructions:
step 1 Preheat your oven to 400°F (200°C). Line a baking tray with foil for easy cleanup.
step 2 In a small bowl, mix together Cajun seasoning, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper.
step 3 Pat the salmon and shrimp dry with paper towels. Drizzle olive oil over both, then season generously with the spice mix.
step 4 Spread the sliced onions evenly over the prepared tray.
step 5 Place the salmon fillet in the center of the tray and arrange the shrimp evenly around it.
step 6 Drizzle lemon juice over the entire tray.
step 7 Bake in the preheated oven for 15-18 minutes, or until the salmon flakes easily and the shrimp are pink and cooked through.
step 8 Remove from the oven and garnish with chopped parsley before serving.

Storage and Reheating Tips:
Store any leftovers in an airtight container in the refrigerator for up to 3 days. To reheat, place in a 300°F oven for 10-12 minutes or until warmed through, or microwave in short intervals, being careful not to overcook the shrimp. For best taste and texture, avoid freezing after baking.
