Ox Liver with Pap Sauce and Tomato Bean Relish

Instructions

step 1 Rinse and pat dry the liver slices. Season with salt, pepper, and paprika.
step 2 Heat oil in a skillet over medium-high heat. Sear the liver slices for 2-3 minutes per side. Remove and set aside.
step 3 In the same skillet, add chopped onion and garlic. Sauté until translucent.
step 4 Add Worcestershire sauce and beef stock, stir, and simmer for 2 minutes. Return liver to the pan and simmer for another 3-4 minutes. Do not overcook.
step 5 For pap, bring 3 cups of water and salt to a boil in a pot. In a separate bowl, mix maize meal with 1 cup of cold water to make a paste.
step 6 Stir the maize paste into the boiling water and reduce heat. Stir constantly until thickened and smooth. Cover and steam on low for 10-15 minutes. Stir in butter if using.
step 7 For the relish, heat oil in a small saucepan. Sauté onion and garlic until soft.
step 8 Add tomatoes and cook until broken down, about 5 minutes.
step 9 Stir in baked beans, seasonings, and curry powder if using. Simmer for another 5 minutes.
step 10 Serve ox liver with a scoop of pap and tomato bean relish on the side. Spoon sauce over the liver for extra flavor.

Storage and Reheating Tips

Store liver, pap, and relish in separate airtight containers in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave, adding a splash of water or stock to keep moist.
