Instructions

step 1 Season steaks generously with salt and black pepper. Let rest at room temperature for 20–30 minutes.
step 2 Heat olive oil in a cast iron or heavy skillet over medium-high heat. Sear steaks for 3–4 minutes per side for medium-rare, adding butter, garlic, and herbs during the last minute. Baste steaks with butter. Rest steaks 5–10 minutes before slicing.
step 3 Rinse cut fries in cold water, drain, and pat dry. Heat oil in a deep fryer or pot to 350°F (175°C). Fry potatoes in batches for 4–6 minutes until golden and crisp. Drain on paper towels and season with salt.
step 4 In a bowl, toss lettuce, tomatoes, red onion, cucumber, and olives with olive oil and vinegar or lemon juice. Season with salt and pepper.
