Instructions
Step 1: Preheat oven to 350°F (175°C). Grease a 9×13-inch baking dish with butter or nonstick spray.
Step 2: In a large bowl, whisk together pancake mix, milk, and egg until smooth.
Step 3: Pour half of the pancake batter into the prepared baking dish. Bake for 5–7 minutes, just until it begins to set.
Step 4: Remove from the oven and evenly spread cooked sausage over the baked pancake layer. Drizzle 1/2 cup maple syrup over the sausage.
Step 5: Pour the remaining pancake batter over the top and gently spread to cover the sausage layer.
Step 6: Return to the oven and bake for 25–30 minutes, or until the top is golden and the casserole is cooked through.
Step 7: Let cool for 5–10 minutes before slicing. Serve with extra maple syrup if desired.
Storage Information
Store leftovers covered in the refrigerator for up to 4 days. Reheat in the microwave or oven. This casserole can also be frozen (whole or sliced) for up to 1 month. Thaw overnight in the fridge before reheating.
