Pesto Mozzarella Grilled Cheese Recipe

Instructions:
Step 1: Lay out the bread slices and spread basil pesto evenly on one side of each slice.

Step 2: Sprinkle mozzarella cheese over two of the pesto-covered slices. Top with the remaining slices, pesto side down, to form two sandwiches.

Step 3: Heat a skillet or griddle over medium heat. Melt 1 tablespoon butter, then add the sandwiches. Grill until golden brown and crispy, about 3–4 minutes per side, adding more butter as needed.

Step 4: Once the cheese is fully melted and the bread is toasted, remove from the skillet. Slice and serve warm, garnished with fresh herbs if desired.

Storage information:
Best enjoyed fresh. If storing, let cool and refrigerate in an airtight container for up to 2 days. Reheat in a skillet or toaster oven for best texture.
