Philly Cheesesteak Breakfast Bagel

Instructions:
Step 1: In a small bowl, mix together mayonnaise and sriracha sauce to make the spicy mayo. Set aside.

Step 2: Heat olive oil in a skillet over medium heat. Add chopped bell pepper and onion; sauté for 3–4 minutes until softened.

Step 3: Add sliced steak to the skillet. Season with salt and pepper and cook for another 3–4 minutes until browned.

Step 4: Lower the heat and place provolone slices over the steak mixture. Cover the skillet for 1–2 minutes to melt the cheese, then remove from heat.

Step 5: In a separate pan, fry eggs to your desired doneness. (Sunny-side up or over-easy works great.)

Step 6: Spread spicy mayo on the bottom halves of the toasted bagels. Layer on the cheesy steak mixture, followed by a fried egg.

Step 7: Top with the other half of the bagel and serve hot.

Storage Information:
Best enjoyed fresh, but you can prep the steak and veggie mixture ahead of time and refrigerate for up to 2 days. Reheat before assembling. Not ideal for freezing due to the egg and bagel texture.
