Instructions
Step 1: Heat olive oil in a large skillet over medium heat. Add the chopped peppers and onion, cooking until softened, about 5–7 minutes.
Step 2: Push the vegetables to the side of the skillet and add the ground beef. Season with salt and pepper, and cook until browned, breaking it apart with a spatula as it cooks.
Step 3: Stir in Worcestershire sauce and beef broth. Simmer for 2–3 minutes until slightly thickened and flavors combine.
Step 4: Reduce heat to low and mix in the chopped provolone cheese until melted and evenly distributed.
Step 5: Spoon the cheesy meat mixture onto toasted brioche buns and serve hot.
Storage Information
Store the meat mixture separately from the buns in an airtight container in the refrigerator for up to 4 days. Reheat in a skillet over medium heat, adding a splash of broth if needed to loosen. Assemble just before serving to avoid soggy buns.
