Instructions

Step 1 Freeze the ribeye steak for about 30 minutes to make it easier to slice thinly.
Step 2 Slice the steak thinly against the grain and set aside.
Step 3 In a large skillet over medium heat, add vegetable oil and cook the chopped onions until caramelized, about 8-10 minutes. Remove and set aside.
Step 4 In the same skillet, add the sliced steak, season with salt and pepper, and cook until browned, about 4-5 minutes.
Step 5 Add the cooked onions back into the skillet with the steak and stir to combine.
Step 6 Lower the heat and top the mixture with slices of provolone cheese. Cover until melted.
Step 7 Meanwhile, toast the inside of the hoagie rolls with butter on a skillet until golden.
Step 8 Fill each toasted roll with the cheesy steak and onion mixture. Serve hot.

Storage and Reheating Tips

Store leftover steak mixture in an airtight container in the fridge for up to 3 days. Reheat in a skillet over medium heat until warmed through. Assemble fresh sandwiches before serving. Toast bread fresh to maintain crisp texture. Avoid microwaving assembled sandwiches to prevent sogginess.
