Instructions
step 1 In a pot, bring water and salt to a boil. Gradually add maize meal while stirring with a fork or wooden spoon.
step 2 Reduce heat to low, cover with a lid, and steam for 25–30 minutes, checking and fluffing with a fork occasionally to keep it crumbly.
step 3 Heat oil in a separate pan. Add onion and cook until soft.
step 4 Stir in garlic and chopped peppers, and cook for another 2–3 minutes.
step 5 Add ground beef and cook until browned, breaking it apart with a spoon.
step 6 Stir in curry powder, paprika, thyme, salt, and pepper.
step 7 Add cabbage and mix well. Pour in water or stock, cover, and let simmer for 15–20 minutes, stirring occasionally until cabbage is tender and flavors combine.
step 8 Serve hot cabbage and mince mixture alongside fluffy phuthu.
Storage and Reheating Tips
Store leftovers in airtight containers in the fridge for up to 3 days. Reheat phuthu by steaming or microwaving with a damp paper towel to retain moisture. Reheat cabbage and mince on the stove or in the microwave until warmed through.
