Instructions:
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
Step 2: In a shallow bowl, whisk together eggs and milk.
Step 3: In a separate bowl, combine crushed potato chips, Parmesan cheese, garlic powder, and black pepper.
Step 4: Dip each chicken piece into the egg mixture, then coat thoroughly in the chip mixture, pressing gently to adhere.
Step 5: Place coated chicken on the prepared baking sheet. Lightly spray with cooking spray or drizzle with a little olive oil to help crisp the coating.
Step 6: Bake for 25–30 minutes, or until the chicken is golden and cooked through (internal temperature should reach 165°F/74°C).
Step 7: Garnish with parsley if desired and serve with your favorite dipping sauce or sides.
Storage Information:
Store any leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the oven or air fryer to maintain crispiness. Avoid microwaving to prevent sogginess.
