Instructions
Step 1: Preheat oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish.
Step 2: Grate the baked and cooled potatoes (skins on or off, your choice) using the large holes of a box grater.
Step 3: In a large bowl, combine grated potatoes, minced onion, shredded cheddar, sour cream, melted butter, garlic powder, salt, and black pepper. Gently fold everything together until just combined.
Step 4: Transfer the mixture to the prepared baking dish and spread evenly.
Step 5: Bake uncovered for 30-35 minutes, or until bubbly and the top is lightly golden.
Step 6: Garnish with chopped chives or parsley before serving, if desired.
Storage Information
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) until warmed through. This dish can also be frozen before baking; thaw overnight in the refrigerator and bake as directed.
