Raw Zucchini Salad

Instructions

Step 1: Use a vegetable peeler or mandoline to slice the zucchini into thin ribbons. Place in a large bowl.

Step 2: Add crumbled feta, toasted pine nuts, chopped dill, and basil to the zucchini.

Step 3: In a small bowl, whisk together olive oil, lemon juice, lemon zest, salt, and pepper.

Step 4: Pour the dressing over the salad and toss gently to coat.

Step 5: Let sit for 5-10 minutes to allow flavors to meld. Garnish with lemon wedges if desired and serve chilled.

Storage Information

This salad is best enjoyed fresh. If storing, cover and refrigerate for up to 24 hours. Toss again before serving as some liquid may settle at the bottom.
