Instructions
Step 1: In a mixing bowl, combine cream cheese, shredded cheddar, red bell pepper, green onion, garlic powder, salt, and pepper. Mix until well blended.
Step 2: Lay out half of the Ritz crackers on a clean surface. Spoon or pipe a dollop of the cheese mixture onto each one.
Step 3: Top with another cracker to create a sandwich. Press gently to seal.
Step 4: Arrange on a serving tray and refrigerate for 15–20 minutes to firm up before serving.
Step 5: Serve chilled or at room temperature. Optionally, garnish with extra chopped green onion or a sprinkle of paprika.
Storage Information
Store leftover cracker sandwiches in an airtight container in the refrigerator for up to 2 days. For best texture, assemble shortly before serving to prevent the crackers from becoming too soft.
