Instructions
Step 1: Line a baking sheet with parchment paper. Spread marshmallow creme onto the flat side of 15 Ritz crackers.
Step 2: Top each with another Ritz cracker to form a sandwich. Lightly press together.
Step 3: In a microwave-safe bowl, melt chocolate chips with coconut oil (if using) in 30-second intervals, stirring until smooth.
Step 4: Dip each sandwich into the melted chocolate, using a fork to coat evenly. Let excess chocolate drip off, then place on the prepared baking sheet.
Step 5: While chocolate is still wet, sprinkle with crushed graham crackers and mini marshmallows.
Step 6: Refrigerate for 20–30 minutes or until chocolate is set.
Storage Information
Store Ritz S’mores Cookies in an airtight container in the refrigerator for up to 1 week. For a softer texture, let them sit at room temperature for a few minutes before enjoying. These treats are also freezer-friendly—store in a freezer-safe container for up to 1 month.
