Ingredients:
1.5 kg beef sirloin or rib roast
2 tbsp olive oil
1 tbsp sea salt
1 tsp black pepper
1 tsp garlic powder
1 tsp dried thyme
1 kg Maris Piper potatoes, peeled and halved
3 tbsp goose fat or vegetable oil (for roasting potatoes)
3 large carrots, peeled and halved lengthways
2 parsnips, peeled and halved
200 g Brussels sprouts, trimmed
2 Yorkshire puddings (optional)
2 stuffing balls
For the gravy:
2 tbsp beef drippings or butter
2 tbsp plain flour
500 ml beef stock
