Step 1: Preheat your oven to 375°F (190°C). Slice each chicken breast horizontally to create a pocket, being careful not to cut all the way through.

Step 2: Season the inside and outside of the chicken breasts with salt, pepper, garlic powder, and Italian seasoning.

Step 3: Fill each pocket with a bit of spinach, roasted red peppers, and shredded mozzarella. Secure with toothpicks or kitchen twine.

Step 4: Heat olive oil and butter in a large oven-safe skillet over medium heat. Sear the stuffed chicken breasts for 2–3 minutes per side until golden brown.

Step 5: Transfer the skillet to the oven and bake for 15–20 minutes, or until the chicken reaches an internal temperature of 165°F (74°C).
