Instructions:
Step 1: Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
Step 2: Place the halved tomatoes, onion, and garlic on the baking sheet. Drizzle with olive oil and sprinkle with salt, pepper, and red pepper flakes if using.
Step 3: Roast in the preheated oven for 35–40 minutes, or until the tomatoes are soft and slightly caramelized.
Step 4: Transfer the roasted vegetables to a blender or food processor. Add balsamic vinegar and blend until smooth (or slightly chunky, if preferred).
Step 5: Stir in the chopped basil. Taste and adjust seasoning if needed.
Step 6: Serve warm over pasta or let cool and store for later use.
Storage Information:
Store the roasted tomato sauce in an airtight container in the refrigerator for up to 5 days. For longer storage, freeze in a sealed container or ice cube trays for up to 3 months. Reheat gently on the stovetop before serving.
