Instructions
Step 1: Preheat oven to 375°F (190°C) and line a baking sheet with parchment paper.
Step 2: In a skillet over medium heat, cook sausage until browned and fully cooked. Drain excess fat and let cool slightly.
Step 3: In a large bowl, mix cooked sausage with cream cheese, Rotel tomatoes, shredded cheeses, and breadcrumbs (if using) until well combined.
Step 4: Roll mixture into 1-inch balls and place on the prepared baking sheet.
Step 5: Bake for 15–20 minutes, or until bites are golden and heated through.
Step 6: Garnish with chopped chives if desired. Serve warm.
Storage Information
Store leftover bites in an airtight container in the refrigerator for up to 4 days. Reheat in the oven at 350°F (175°C) for 5–8 minutes until warmed through. You can also freeze unbaked bites for up to 2 months; bake from frozen, adding a few extra minutes to the cook time.
