Salmon Power Bowl with Avocado, Eggs & Fresh Veggies

Instructions

Step 1: Start by hard boiling your eggs. Place them in a pot of cold water, bring to a boil, then remove from heat and let sit for 10 minutes. Transfer to ice water, peel, and halve them.

Step 2: Pat the salmon fillets dry with paper towels. Mix together garlic powder, paprika, black pepper, and salt in a small bowl.

Step 3: Rub the salmon evenly with the spice mixture. Heat 1 tbsp of olive oil in a pan over medium-high heat and cook the salmon skin-side up for 4-5 minutes, then flip and cook for another 4-5 minutes until cooked through. Drizzle with 1 tsp lemon juice.

Step 4: Layer fresh spinach as the base on your serving bowl. Arrange the sliced avocado, boiled egg halves, cucumber slices, cherry tomatoes, and black olives around the bowl in sections.

Step 5: Place the cooked salmon fillet in the center of the bowl. Drizzle the entire bowl with 1 tbsp olive oil and 1 tsp lemon juice, then season with salt and pepper to taste.

Step 6: Serve immediately and enjoy your nutritious power bowl.

Storage and Reheating Tips

Store the components separately in airtight containers in the refrigerator for up to 3 days. Keep the salmon, veggies, eggs, and avocado in individual containers to prevent sogginess.

When ready to eat, gently reheat the salmon in a 350°F oven for about 5 minutes, or enjoy it cold. Assemble fresh with all the vegetables just before serving for the best texture and flavor.

Pro tip: Add the avocado and dressing only right before eating to prevent browning and maintain crispness.
