Instructions
Step 1: Pat your salmon fillet dry with paper towels and season both sides generously with salt and black pepper.
Step 2: Heat a skillet over medium-high heat. Add a drizzle of olive oil and place the salmon skin-side up, cooking for about 5-6 minutes until the flesh is golden.
Step 3: Flip the salmon and cook for another 3-4 minutes until cooked through, then transfer to your plate.
Step 4: In the same skillet, melt butter over medium heat and add your beaten eggs, stirring gently until soft, creamy curds form, about 3-4 minutes.
Step 5: Slice your avocado and arrange on the plate alongside the eggs and salmon.
Step 6: Top the eggs with fresh green onions, season everything with salt and pepper, and serve immediately.
Storage and Reheating Tips
This power plate is best enjoyed fresh, but you can store components separately in airtight containers for up to 2 days. Keep the salmon, eggs, and avocado in separate compartments to prevent sogginess.
To reheat, gently warm the salmon in a 300°F oven for about 5 minutes. The eggs can be reheated in a skillet with a touch of butter over low heat, while the avocado is best served chilled or at room temperature.
For meal prep success, cook your salmon and eggs ahead of time, but slice and season the avocado just before serving to prevent browning.
