Step 1: In a bowl, whisk together the eggs, milk, salt, and pepper. Heat butter in a nonstick skillet over medium heat and scramble the eggs until soft and fluffy. Remove from heat.
Step 2: Lay out the tortillas. Place one cooked sausage link on each tortilla. Top with scrambled eggs and sprinkle generously with shredded cheddar cheese.
Step 3: Roll up each tortilla tightly, tucking in the sides to hold the filling.
Step 4: Heat a clean skillet over medium heat. Place the roll-ups seam-side down and cook for 2-3 minutes per side until golden brown and the cheese is melted.
Step 5: Remove from skillet, slice in half if desired, and serve warm.
Storage Information
Store any leftover roll-ups in an airtight container in the refrigerator for up to 3 days. To reheat, warm them in a skillet over low heat or microwave in 30-second intervals until heated through. For longer storage, wrap them individually in foil and freeze for up to 1 month; thaw overnight in the fridge before reheating.
