Instructions
Step 1: Heat a skillet over medium-high heat and add your smoked sausages. Cook for 5-7 minutes, turning occasionally, until browned and cooked through. Set aside on a plate.
Step 2: In the same skillet, add butter or oil and toss in your potatoes. Season with paprika, salt, and pepper. Cook for 8-10 minutes, stirring occasionally, until golden and crispy on all sides.
Step 3: Push the potatoes to the side and crack both eggs into the skillet. Cook until the whites are set but yolks remain slightly runny, about 3-4 minutes.
Step 4: Plate everything together, arranging the sausages, eggs, and potatoes on a serving plate. Top the eggs with fresh parsley and extra black pepper.
Step 5: Serve immediately while everything is hot and enjoy your power-packed breakfast.
Storage and Reheating Tips
Store leftover components in separate airtight containers in the refrigerator for up to 3 days. The sausages and potatoes keep particularly well.
Reheat the sausages and potatoes together in a skillet over medium heat for 5-7 minutes until warmed through. For best results, cook fresh eggs when you’re ready to eat.
This breakfast plate is best enjoyed fresh, but the cooked sausages and potatoes make excellent additions to lunch bowls or grain salads the next day.
