Sausage, Eggs & Crispy Home Fries Plate

Instructions

step 1 Bring a pot of salted water to a boil. Add diced potatoes and parboil for 5–6 minutes. Drain and let cool.
step 2 Heat olive oil in a large skillet over medium-high heat. Add potatoes and cook for 15–20 minutes, stirring occasionally until golden and crispy.
step 3 Season home fries with paprika, garlic powder, onion powder, salt, and pepper. Toss to coat and set aside.
step 4 In another skillet, cook sausages over medium heat until browned and cooked through, about 8–10 minutes. Set aside and keep warm.
step 5 In a bowl, whisk eggs with milk or cream, salt, and pepper.
step 6 Melt butter in a nonstick pan over medium heat. Pour in eggs and gently stir with a spatula until soft and fluffy, about 3–4 minutes.
step 7 Plate scrambled eggs with sausages and crispy home fries. Garnish with chopped parsley if desired.

Storage and Reheating Tips

Store leftovers in separate airtight containers in the fridge for up to 3 days. Reheat sausages and home fries in a skillet or oven to keep their texture. Scrambled eggs are best reheated gently in a microwave or nonstick pan over low heat to avoid overcooking.
