Instructions

Step 1: Peel and cut the potatoes into fries, rinse with cold water, and pat dry completely.

Step 2: Heat vegetable oil in a fryer or deep pan and fry the potatoes until golden brown and crispy. Remove and season lightly with salt.

Step 3: In a bowl, combine the chopped boiled eggs, mayonnaise, mustard, celery, parsley, chives, black pepper, and half of the paprika. Mix until creamy.

Step 4: Heat olive oil in a skillet over medium heat and cook the sausage chunks until browned and slightly crispy on the edges.

Step 5: Sprinkle the remaining paprika over the sausage and stir well.

Step 6: Prepare the tomatoes by dicing them into small cubes and lightly seasoning with a pinch of salt.

Step 7: Arrange the crispy fries, creamy egg salad, cooked sausage, and diced tomatoes in serving bowls.

Step 8: Garnish with extra chopped parsley or chives if desired.

Step 9: Serve immediately while the fries and sausage are hot.

Storage and Reheating Tips

Store leftover sausage and egg salad separately in airtight containers in the refrigerator for up to 3 days. Fries are best enjoyed fresh but can be stored separately for up to 1 day.

Reheat the sausage in a skillet or microwave until warmed through. Reheat the fries in an oven or air fryer at 180°C for 5 to 7 minutes to restore crispiness. The egg salad should be served chilled and should not be reheated.
