Instructions:
step 1 Bring a large pot of salted water to a boil. Add the chopped potatoes and cook for 15–20 minutes or until fork tender.
step 2 While the potatoes cook, heat oil in a skillet over medium heat. Fry sausages for 10–12 minutes, turning occasionally, until browned and cooked through.
step 3 In a small saucepan, heat the baked beans over low heat until warmed through.
step 4 Drain the cooked potatoes and mash with butter and warm milk until smooth. Season with salt and pepper to taste.
step 5 Plate the mashed potatoes alongside the sausages and pour baked beans over one side.
step 6 Serve hot with optional gravy or a dollop of mustard.
Storage and Reheating Tips:
Store leftovers in separate airtight containers in the refrigerator for up to 3 days. Reheat sausages and mash in the microwave or on the stovetop. Reheat beans gently in a saucepan over low heat.
