Step 4: Fold the sausage slices into the pancake batter until evenly coated.
Step 5: Heat a large skillet or griddle over medium heat and melt the butter.
Step 6: Spoon small portions of the batter with sausage pieces into the skillet.
Step 7: Cook for 2 to 3 minutes on each side until golden brown and fully cooked in the center.
Step 8: Continue cooking the remaining pancake bites in batches, adding more butter as needed.
Step 9: Transfer to a serving plate and top with butter.
Step 10: Drizzle generously with maple syrup before serving.

Store leftover sausage pancake bites in an airtight container in the refrigerator for up to 4 days.
Reheat in the microwave for 20 to 30 seconds or warm in a skillet over low heat.
Freeze cooled pancake bites in a freezer-safe container for up to 2 months.
