Step 1 Cook the spaghetti in salted boiling water until al dente, reserving 1/4 cup of pasta water before draining.
Step 2 Heat olive oil in a skillet over medium heat and cook the sliced sausage until browned.
Step 3 Add chopped onion and bell peppers, sautéing until softened.
Step 4 Stir in minced garlic and cook for 1 minute until fragrant.
Step 5 Pour in tomato sauce and add salt, pepper, paprika, and oregano, mixing well.
Step 6 Let the sauce simmer for 8–10 minutes to develop flavor.
Step 7 Add the cooked spaghetti to the skillet and toss to coat evenly.
Step 8 Pour in reserved pasta water as needed to loosen the sauce.
Step 9 Plate the pasta and top with halved boiled eggs.
Step 10 Garnish with fresh parsley and serve warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat on the stovetop or microwave with a splash of water to refresh the sauce. Boiled eggs are best added fresh when serving for optimal texture.
