Step 1: Preheat your oven to 375°F (190°C) and lightly grease a baking dish./nStep 2: Heat olive oil in a skillet over medium heat. Add diced potatoes and cook until slightly tender and golden, about 8–10 minutes./nStep 3: Add diced onion and sausage to the skillet and cook until the sausage is browned and fully cooked./nStep 4: In a large bowl, whisk together eggs, milk, salt, pepper, garlic powder, and paprika./nStep 5: Spread the sausage and potato mixture evenly in the prepared baking dish./nStep 6: Pour the egg mixture over the sausage and potatoes./nStep 7: Sprinkle cheddar and mozzarella cheese evenly on top./nStep 8: Bake for 30–35 minutes or until the eggs are set and the top is golden.
Step 9: Remove from the oven and let it rest for 5 minutes before slicing./nStep 10: Garnish with chopped parsley and serve warm.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat individual portions in the microwave or warm in the oven at a low temperature until heated through. This casserole can also be frozen for up to 2 months; thaw overnight in the refrigerator before reheating.
