step 1 Cook noodles according to package instructions. Drain and set aside.
step 2 In a bowl, whisk together soy sauce, oyster sauce, hoisin sauce, brown sugar, sesame oil, and the cornstarch slurry. Set aside.
step 3 Heat 1 tablespoon oil in a large skillet or wok over high heat. Add beef slices, season with salt and pepper, and cook until browned and just cooked through. Remove and set aside.
step 4 In the same skillet, add remaining oil and sauté garlic (and ginger if using) for 1 minute.
step 5 Add broccoli and a splash of water. Cover and steam for 2-3 minutes until tender-crisp.
step 6 Return beef to the skillet along with cooked noodles.
step 7 Pour in the sauce and toss everything together until evenly coated and heated through, about 2-3 minutes.
step 8 Serve hot and garnish with green onions or sesame seeds if desired.
Storage and Reheating Tips
Store leftovers in an airtight container in the fridge for up to 4 days. Reheat in a skillet over medium heat with a splash of water or soy sauce to refresh the noodles. Avoid microwaving too long to prevent chewy beef.
