Instructions
Step 1: Heat 1 tbsp of vegetable oil in a large skillet or wok over medium-high heat. Season the beef cubes with black pepper and sear them until browned on all sides, about 4-5 minutes. Remove and set aside.
Step 2: In the same skillet, add the minced garlic and cook for 30 seconds until fragrant. Pour in 2 tbsp soy sauce, 1 tbsp oyster sauce, and 1 tbsp brown sugar. Return the beef to the skillet and toss to coat evenly. Let it simmer for 2-3 minutes until the glaze thickens. Transfer to your serving box.
Step 3: Heat 1 tbsp of vegetable oil in the skillet over high heat. Add the mixed vegetables, broccoli, zucchini, carrots, and bell pepper. Stir-fry for 4-5 minutes until tender-crisp. Drizzle with 1 tbsp soy sauce and 1 tbsp sesame oil. Toss well and add to your box next to the beef.
Step 4: In a separate small skillet, scramble the egg until just cooked through. Set aside.
Step 5: Heat a touch of vegetable oil in the skillet and add your cooked rice, breaking up any clumps. Stir-fry for 2-3 minutes, then add the scrambled egg, green peas, and remaining sesame oil. Mix well and cook for another 2 minutes until heated through.
Step 6: Transfer the fried rice to your box and garnish the entire plate with fresh chopped green onions. Serve immediately and enjoy.
Storage and Reheating Tips
Store each component separately in airtight containers in the refrigerator for up to 3 days. This keeps the rice from getting soggy and preserves the texture of your vegetables and beef.
To reheat, warm the beef and vegetables together in a skillet over medium heat for 2-3 minutes. Reheat the fried rice separately in a microwave or skillet, adding a splash of water if it seems dry.
For meal prep, this box is excellent for lunch containers throughout the week. Just assemble fresh when ready to eat, or enjoy cold fried rice with reheated beef for a different take.
