Instructions
Step 1 In a bowl, whisk together flour, sugar, baking powder, baking soda, and salt.
Step 2 In another bowl, mix milk, egg, and melted butter.
Step 3 Pour the wet ingredients into the dry ingredients and mix until just combined.
Step 4 Heat a non-stick pan over medium heat and lightly grease with butter or oil.
Step 5 Pour a portion of batter onto the pan to form a pancake.
Step 6 Place a slice of ham and a handful of shredded cheese on top of the pancake.
Step 7 Cover with a little more batter and cook until bubbles form on the surface.
Step 8 Carefully flip and cook the other side until golden brown and the cheese is melted.
Step 9 Repeat with remaining batter and fillings.
Step 10 Stack the pancakes and serve warm while the cheese is gooey.
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in a skillet over low heat or in the microwave until warmed through. For best texture, reheat in a pan to keep the outside slightly crisp.
