Instructions:
Step 1: Preheat your oven to 375°F (190°C). Lightly grease a baking dish.
Step 2: In a skillet over medium-high heat, warm the olive oil. Season pork chops with salt, pepper, and a little garlic butter.
Step 3: Sear the pork chops for about 3-4 minutes on each side until golden brown. Remove and set aside.
Step 4: In a bowl, combine the diced potatoes, heavy cream, cheddar cheese, Parmesan cheese, minced garlic, onion powder, salt, and pepper. Mix well.
Step 5: Spread the potato mixture evenly in the baking dish. Nestle the seared pork chops on top.
Step 6: Drizzle the remaining garlic butter over the chops and potatoes.
Step 7: Cover with foil and bake for 30 minutes. Remove the foil and bake for an additional 15-20 minutes or until potatoes are tender and the top is golden.
Step 8: Garnish with fresh parsley before serving.
Storage Information:
Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) until warmed through. For longer storage, freeze individual portions for up to 2 months and reheat as needed.
