Slow Cooker Beef and Vegetable Stew

Instructions

Step 1 Place the beef stew meat into the slow cooker /n
Step 2 Add potatoes, carrots, celery, onion, and garlic on top of the beef /n
Step 3 In a bowl, mix beef broth, diced tomatoes, tomato paste, Worcestershire sauce, thyme, paprika, salt, and pepper /n
Step 4 Pour the mixture over the ingredients in the slow cooker /n
Step 5 Cover and cook on low for 7–8 hours or on high for 4–5 hours until the beef is tender /n
Step 6 In a small bowl, mix cornstarch and water to form a slurry, then stir into the stew /n
Step 7 Cook on high for an additional 10–15 minutes until the broth thickens /n
Step 8 Stir well and serve warm

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop or in the microwave until warmed through. This stew can also be frozen for up to 3 months; thaw overnight in the refrigerator before reheating.
