Slow Cooker Beef Stew

Instructions

step 1 Season the beef cubes with salt and pepper, then toss in flour to coat evenly.
step 2 In a large skillet, heat olive oil over medium-high heat and sear the beef in batches until browned on all sides.
step 3 Transfer the seared beef to the slow cooker.
step 4 Add the chopped onion, garlic, carrots, and potatoes on top of the beef.
step 5 In a bowl, whisk together beef broth, tomato paste, Worcestershire sauce, thyme, rosemary, and bay leaves. Pour over the meat and vegetables.
step 6 Cover and cook on LOW for 8–9 hours or HIGH for 4–5 hours, until beef is tender and vegetables are soft.
step 7 Discard bay leaves, stir the stew, and adjust seasoning with salt and pepper if needed.
step 8 Garnish with chopped parsley and serve hot.

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently in a saucepan over medium heat or microwave until warmed through. This stew also freezes well for up to 3 months.
