Slow Cooker Beef Tortellini

Instructions

Step 1 In a skillet over medium heat, cook ground beef and chopped onion until beef is browned. Drain excess fat.
Step 2 Add minced garlic and cook for 1 minute until fragrant.
Step 3 Transfer the beef mixture to the slow cooker.
Step 4 Add crushed tomatoes, tomato sauce, beef broth, Italian seasoning, salt, pepper, and paprika. Stir well.
Step 5 Cover and cook on low for 6–7 hours or on high for 3–4 hours.
Step 6 About 30 minutes before serving, stir in the tortellini.
Step 7 Continue cooking until tortellini is tender.
Step 8 Stir in heavy cream and Parmesan cheese.
Step 9 Taste and adjust seasoning if needed.
Step 10 Garnish with fresh parsley before serving.

Storage and Reheating Tips

Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat on the stovetop over medium heat or in the microwave until warmed through. Add a splash of broth or cream when reheating to maintain a smooth consistency.
