Instructions
Step 1 Season the pork roast with salt, pepper, and garlic powder /n
Step 2 Heat olive oil in a skillet over medium-high heat and sear the roast on all sides until browned /n
Step 3 Transfer the pork roast to the slow cooker /n
Step 4 In a bowl, mix Dijon mustard, whole grain mustard, honey, minced garlic, chicken broth, and apple cider vinegar /n
Step 5 Pour the honey mustard mixture over the pork roast /n
Step 6 Cover and cook on low for 7–8 hours or on high for 4–5 hours until tender /n
Step 7 Baste the roast occasionally with the sauce if possible /n
Step 8 Remove the roast, slice or shred, and spoon sauce over the top /n
Step 9 Serve warm
Storage and Reheating Tips
Store leftovers in an airtight container in the refrigerator for up to 4 days. Reheat gently on the stovetop or in the microwave with some of the sauce to keep the meat moist. This dish can also be frozen for up to 2 months; thaw overnight before reheating.
