Step 1. Heat a cast-iron skillet or griddle over medium-high heat and add the vegetable oil. /n
Step 2. Divide the ground beef into two loosely packed balls. /n
Step 3. Place a beef ball onto the hot skillet and immediately smash it flat with a spatula to create a thin patty. /n
Step 4. Season the patties with salt and black pepper and cook for about 2 minutes until a crispy crust forms. /n
Step 5. Flip the patties and place two slices of cheddar cheese on each patty, then cook for another 1–2 minutes until the cheese melts. /n
Step 6. In the same skillet melt the butter and sauté the sliced onions until soft and lightly caramelized. /n
Step 7. Toast the brioche buns on the skillet until golden brown. /n
Step 8. Spread mayonnaise, mustard, and ketchup on the bottom bun. /n
Step 9. Place the cheesy smashburger patties on the bun, then top with sautéed onions and fresh jalapeño slices. /n
Step 10. Close with the top bun and serve immediately.
Storage and Reheating Tips
Store leftover burger patties in an airtight container in the refrigerator for up to 3 days. Reheat the patties in a hot skillet for the best texture. Avoid microwaving if possible as it can soften the crust. Toast fresh buns and assemble the burger just before serving for the best flavor and texture.
