Step 1: In a large bowl, combine ground chuck, cubed cheddar, diced jalapeños, garlic powder, smoked paprika, salt, and pepper. Gently mix to combine, being careful not to overwork the meat.
Step 2: Form the mixture into 6 burger patties, pressing slightly in the center to create a small indent (this helps them cook evenly).
Step 3: Preheat your grill or skillet over medium-high heat. Cook the patties for 4-5 minutes per side, or until desired doneness and the cheddar is melty and slightly crisped.
Step 4: Toast the burger buns lightly on the grill or in a skillet.
Step 5: Assemble the burgers with lettuce, pickles, crispy bacon, and a generous drizzle of spicy mayo or chipotle aioli.
Storage Information
Store leftover cooked patties in an airtight container in the refrigerator for up to 3 days. Reheat gently in a skillet or microwave. Assemble fresh with buns and toppings for best taste.
