Step 1: Preheat oven to 425°F (220°C). Toss broccolini with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 15 minutes. Sprinkle with parmesan and return to oven for 5 minutes until crisp.
Step 2: While broccolini roasts, rub chicken breasts with olive oil, smoked paprika, oregano, garlic powder, salt, and pepper. Cook on a grill or skillet over medium heat for 5–6 minutes per side or until fully cooked. Let rest before slicing.
Step 3: In a bowl, combine feta, sour cream (or Greek yogurt), lemon juice, zest, and parsley. Mix until creamy.
Step 4: Plate sliced chicken with broccolini and a generous dollop of lemon feta cream on the side or over the chicken.
Storage Information
Store each component in separate airtight containers in the refrigerator for up to 3 days. Reheat the chicken and broccolini in the oven or skillet for best texture. The lemon feta cream can be served cold or at room temperature.
