Instructions
Step 1. Cook the noodles according to the package instructions until just tender, then drain and set aside. /n
Step 2. Slice the steak thinly against the grain and season it with salt and black pepper. /n
Step 3. Heat vegetable oil in a skillet over high heat and sear the steak slices for 1–2 minutes per side until browned but still tender, then remove from the pan. /n
Step 4. In the same pan add sesame oil and minced garlic, sautéing for about 30 seconds until fragrant. /n
Step 5. Add the cooked noodles to the pan and toss with soy sauce, oyster sauce, chili garlic sauce, sriracha, brown sugar, and chili flakes. /n
Step 6. Stir-fry the noodles for 2–3 minutes so they absorb the sauce and become slightly caramelized. /n
Step 7. Push the noodles to one side of the pan and melt butter, then fry the egg until the whites are set and the yolk remains runny. /n
Step 8. Slice the cooked steak into strips if needed and place it over the noodles. /n
Step 9. Transfer the noodles to a bowl and top with the fried egg. /n
Step 10. Garnish with sliced green onions and extra chili flakes before serving.
Storage and Reheating Tips
Store leftover noodles and steak in an airtight container in the refrigerator for up to 2 days. Reheat in a skillet over medium heat with a splash of water or soy sauce to loosen the noodles. For best results, cook a fresh fried egg when reheating rather than storing the egg with the noodles.
