Spinach and Feta Grilled Cheese: A Mediterranean Melt

Instructions:

Step 1: Heat olive oil in a small skillet over medium heat. Add garlic and sauté for 1 minute. Add drained spinach, season with salt and pepper, and cook for 2–3 minutes until heated through. Set aside.

Step 2: In a small bowl, mix the sautéed spinach with feta and mozzarella until well combined.

Step 3: Spread butter on one side of each slice of bread. Place two slices, butter-side down, in a skillet over medium heat.

Step 4: Spoon the spinach and cheese mixture evenly over the bread slices in the skillet. Top with the remaining bread, butter-side up.

Step 5: Grill sandwiches until golden brown and crispy, about 3–4 minutes per side, pressing down slightly with a spatula.

Step 6: Remove from skillet, slice in half, and serve hot.

Storage Information:
This sandwich is best enjoyed fresh, but you can store leftovers in the fridge for up to 1 day. Reheat in a skillet or toaster oven to re-crisp the bread before serving.
