Instructions:
Step 1 Preheat oven to 400°F (200°C). Scrub the potatoes, prick them with a fork, and place directly on the oven rack. Bake for 45-60 minutes until tender.
Step 2 While the potatoes are baking, season the steak bites with salt, pepper, rosemary, and parsley.
Step 3 Heat olive oil in a skillet over medium-high heat. Add minced garlic and cook for 30 seconds until fragrant.
Step 4 Add steak bites to the skillet in a single layer. Sear for 2-3 minutes on each side until browned and cooked to your desired doneness. Remove from heat and set aside.
Step 5 Steam broccoli florets for 5-7 minutes until bright green and tender, or sauté in a pan with olive oil or butter for added flavor. Season with salt and pepper.
Step 6 Once potatoes are done, carefully slice them open and fluff the insides with a fork. Add butter, sour cream, and shredded cheddar cheese. Return to the oven for 5 minutes until the cheese is melted.
Step 7 Plate the steak bites, loaded baked potato, and broccoli together. Garnish with green onions if desired.

Store leftovers in airtight containers in the refrigerator for up to 3 days. Reheat steak bites in a skillet over medium heat for best texture. Potatoes and broccoli can be reheated in the microwave or oven until warmed through.
