Instructions:
step 1 Preheat oven to 400°F (200°C). Scrub potatoes clean, prick with a fork, and bake directly on the oven rack for 45-60 minutes until tender.
step 2 Once baked, slice open each potato and fluff the insides. Top with butter, cheese, sour cream, chives, salt, and pepper.
step 3 Steam broccoli until just tender, about 5-6 minutes. Season with butter, salt, and pepper.
step 4 Pat steak cubes dry and season with salt and pepper.
step 5 Heat olive oil in a large skillet over high heat. Add steak cubes in a single layer and sear for 2-3 minutes per side until browned and cooked to desired doneness.
step 6 Reduce heat to medium, add butter, garlic, parsley, and rosemary. Toss steak bites in the melted butter and herbs for 1 minute.
step 7 Serve steak bites hot alongside the loaded baked potato and steamed broccoli.

Storage and Reheating Tips:
Store leftovers in airtight containers in the fridge for up to 3 days. Reheat steak bites in a skillet over low heat to avoid overcooking. Potatoes and broccoli can be reheated in the microwave or oven until warmed through.
